Trick Recipes: Bizarro Ice Cream Cupcakes Lemon and Chocolate Mint

Want to make cute ice-cream shaped cupcakes?

Well here’s some short and easy steps on how to create delicious ice cream cupcakes that will make your mouth water and have your eyes fill up with joy.

First thing that you want to do is to get all of the ingredients that you need to make these wonderful cupcakes.

For the cake you will need :

  • 2 Room temperature eggs
  • 60g Powdered Sugar
  • 60g Flour
  • 15g Melted Butter
  • 2 mixing bowl
  • cream cones
  • rubber spatula

The first thing that you must do is preheat your oven to 320 degrees Fahrenheit.You then should crack open your eggs and put them into a large mixing bowl and then beat them until they become frothy. You want to then add your 60g of powdered sugar into the bowl.

Do not put all of the sugar in at the same time, instead add a little bit of sugar and mix, and repeat until the batter is completely mixed. Then you should sift 60g of flour into that same bowl, while using a rubber spatula to fold in the flour. Again add small amounts of flour at a time. Fold in the melted butter until it is completely folded in. Place ice cream cones on a baking tray and fill them to the top of the hole with the cake batter that you just made.Bake your cupcakes for 15 minutes and check to make sure they’re fully cooked by inserting a toothpick in the center. If there is no batter on the toothpick when it comes out of the cupcake, then they are fully baked.

In order to make the Ice Cream Frosting you will need :

  • 10g granulated sugar
  • 50g egg whites
  • 70g granulated sugar
  • 20ml water
  • 200g unsalted butter
  • Yellow and Green Food coloring
  • Chocolate chips

The first step to making the Ice Cream frosting is adding 10g of granulated sugar to the egg whites in a small bowl, and beat them until peaks form.Second, Add 70g and 20ml of water to a pot over a stove and set the stove to medium heat until a syrup forms. Add the two mixtures from step one and two together and beat them with a electric mixture until stiff peaks form. In a separate bowl mix unsalted butter until it turns into a cream and then add about a third of the previous mixture into the butter and fold it in with a rubber spatula until it is well mixed. Repeat this until all of the mixture is well mixed .

Separate the mixture into two different bowls. Add Yellow food coloring to one of the bowls and green food coloring to the other bowl.Add lemon zest to the bowl with the yellow icing in it.Add chocolate chips into the bowl with the green icing in it.

Scoop the different types of icing onto your room temperature cupcakes in the ice-cream cones to make them look like they are ice cream.

To finish this recipe off you should enjoy the cupcakes with your friends and family, and surprise them when they find out that the cupcakes are not actually ice cream but instead they are yummy cupcakes that look like lemon ice cream and mint chocolate chip ice cream !!
